anyone ever juice rhubarb? if so... what did you juice it with and how was it?

I ordered 2 roots and they are growing fine. I have a friend who loves it in pies, which I have had it also. It was with Strawberries and baked in a Crust. So I will give it to her so she can bake her a pie. I have never juiced it but when it grows I can pop a few stems and try it.

Juiced with pureed strawberry is good. I'm sure apple would be great with it.

i will. i think i'll pick some up tomorrow and give it a try. i think the tartness of the rhubarb will be a lot like cranberries! and i love my cranberry/apple/ginger blend :)

I was also going to suggest strawberries. My parents had rhubarb in our garden growing up and we always had rhubarb pie and rhubarb/strawberry jelly.
You definately need something sweet to counter the bitterness of the rhubarb.

i started off with rhubarb. and yup it tasted JUST like rhubarb. so tart and yummy. then i added in a few strawberries. nice tart taste.
then i added in an orange (without peel), 1/2 an apple, a bit of parsley and mmmmmm was that EVER amazzzing!!! the orange was the big ticket item in this.
i will totally be juicing rhubarb all summer now. soooooo tart and perfect in juice form.
a really nice FRESH taste to it.
mmmm i want more!

Thanks for the heads up on rhubarb, Aleesha. It's the one thing I can always count on growing in my garden. I picked some stalks and they are waiting to be used. I think I will try them in my breakfast smoothie tomorrow morning. I'll let you know how well they go with bananas and spinach.:p

Hey Aleesha,
Rhubarb is one of those vegetables that has pros and cons. Only the stalk can be juiced because the leaves are poisonous.
Although the root has been used medicinally in China since 2700 BC, there's still a lot that is unknown to the western mind.
One really cool fact is that rhubarb and asparagus are the only perennial vegetables!
Rhubarb is very tart but when mixed with sweeter veggies like carrots and beets it adds a nice zing. Rhubarb has good amounts of Vitamin C, Vitamin K, potassium and Magnesium.
