It did not start as an almond joy/mounds recipe. I was wanting some no-bake cookies and it morphed into this. These measurements are as close as I could get from memory. I did not write it down because I had no clue it would turn out pretty tasty.
Ingredients
2 dates (soaked over night until big and juicy)
coconut shreds
2 cups of oats
tablesppons of chocolate power of your choice
almond butter to taste
coconut butter
vanilla bean or extract
agave
1-in a blender (I used my MB), put in the two big juicy soaked dates that have been pitted, some soak water water to get things moving, a couple of tablespoons of almond butter, chocolate powder and 1 tablespoon of coconut butter, vanilla and blend. Blend well eough to get the dates smooth
2-in a food processor with the s-blade, dump the oats in and blend into a powder (or as close as you can get).
3-dump oatmeal in a big bowl. Dump the chocolate mixture in an mix with a wooden spoon. Taste it to see if it is a sweet or as chocolately as you want it. Make your adjustments
4-For the coconut topping, put about 2 tablespoons of shredded coconut in a bowl, add some agave and some coconut butter. Just enough to get it to hold form. Mix it with your finger to get the coconut butter to melt. Taste it to see if it is to your sweetness.
5-take the coconut mixture and place on top of the chocolate bar. The coconut mixture will firm again or just pop it in the fridge for a couple of minutes.
Like I said, it may be better with almond meal instead of oat meal.
Place an almond on top and you have an almond joy. Without the almond and you have a mounds.
The picture did not come out to clear. I should have drizzled some chocolate over it but I was too impatient!
