Hi...
My name is Dave and I eat about 50% raw, but only by default. My interest in raw foods comes almost completely out of happenstance, and I can make no claim to subscribe (presently) to any particular diet.
I've been working in food-service for about 14 years; mostly cooking, but I spent a few years, recently, in the front of the house at a sports bar here in Austin Tx. (I'm from Chicago: GO BULLS!!!!)
Lets just say, a few months ago, I found myself unemployed one day... A close friend offered me a job at a raw foods restaurant, and now I've gone from living mostly off of chicken fried steak and crawfish po-boys to living mostly off of raw tacos with apple walnut charizo and Avocado sandwiches on raw chia bread... Sometimes I go to Wendy's after work... Give me a chance.......
Been a vegetarian three time in my life, Been vegan, been pesco, cooked three years in a vegetarian restaurant and made some kick-ass specials. I enjoy the challenge of limitation. Creating vegetarian dishes was incredibly fun for me. My goal was to let people taste things that they thought they would never taste again. The ultimate dish would bring a nestalgic tear to the eye, I thought.
And so now I find myself with even more limitations. I am developing recipes at a raw, vegan, soy-free, gluten-free restaurant, and there are things I need to know.
I hope y'all will welcome me here. I've been doing a lot of research lately, and I end up on this site all the time. Figgered I'd join up and get in on the conversation. Maybe I'll tell you about my eggless egg salad with young coconut meat for the whites and turmeric-cashew butter for the yolks. Today I made a coconut-ceviche stuffed avocado; we end up with a lot of excess coconut meat...
My spicy-tuna-style sushi rolls are selling quite well.
One more thing...
I am starting to notice the difference. There are times when, out of convenience, I will eat almost completely raw for two or three days at a time. Some days I end up consuming mostly, only juice... And I feel fine and normal. It's on my days off when I notice the difference, I guess, if you know what I mean...
So, let me hang out with you guys; I stay up late at night, dreaming of recipes.
