First let me say I tried to do a search but I couldn't find what I wanted. :(
Anyways, I have Alissa's book, but I do not have access to a dehydrator at the moment. What kind of recipes can I make using mushrooms without pureeing them? I like food sliced, diced, and minced.
I do have a food slicer--poorman's mandolin. :) I miss the firmness of veggie meats. Any help at all would be rawsome, thanks!

I like the Large Dark Mushrooms, the name is slipping my mind, Diced, some soy sauce, Garlic and let it Marinade.
You can make Alissa's pesto stuffed mushrooms without a dehydrator. If you marinate a mushroom for a bit in olive oil and sea salt or olive oil and nama shoyu it will take on the effect of being cooked although not warm. I rarely dehydrate anything anymore unless its winter and really cold. Mushrooms are also very good sliced and marinated in olive oil, lemon juice, and sea salt. They are good marinated and then stuffed with any nut cheese, you could even top with marinara sauce.

Mushroom Soup

Raw Food Diet Cream of Mushroom Soup
This raw food diet soup recipe starts with a creamy cashew milk base and adds flavorful mushrooms for a raw "cream of mushroom" soup. You can warm it up a bit over a hot plate or coffee maker to enjoy a warming raw foods soup. If you like mushroom soup, you'll enjoy this raw food version! I used regular cremini mushrooms in this recipe, but portobellas or plain button mushrooms would work well too.
Ingredients:
* 2 cups cashew milk
* 1/2 onion
* 1 clove garlic
* 1 cup mushrooms
* 2 tbsp Nama Shoyu or Bragg's Liquid Aminos
* 1 tbsp lime juice
* sea salt, to taste
* extra mushrooms for garnish, diced
Preparation:
Process all ingredients in a blender or food processor until blended and creamy, or until desired consistency is reached. Top with extra diced mushrooms.

If you love mushrooms on your pizza, you can use a big portabella cap as your pizza crust and just add on the rest of the raw pizza ingredients. Alissa has a few pizza recipes in her book :)
I'm planning on trying these out in a few days - I've never made raw pizza before, just because making the crust is too much work and not worth it to my lazy, impatient self :rolleyes:

Mushroom soup.
Collard wraps in Alissas book
Mushroom steak
and I just took some small ports(chunked) and tossed them with Tamari,EVOO fresh rosemary and then I tossed in some raw cashews and then a chopped megool (pitted) date. LOL Feed it to a freind who LOVED it.
