is kimchi typically raw? or is it cooked traditionally?
like if i went to korea, and i found a vegan kimchi, would it also be raw?

I believe so. It's fermented though, so it can make you gassy! Just don't eat it by itself.

Kimchi is raw cabbage and it is fermented. However, lots of store bought Kimchi is made with anchovy paste.

yea i know about those guys, but they are fu cking expeeensive.
i was basically just wondering like if i could go to korea and eat kimchi off the street and be in the clear.
why can't you eat it by itself?

Just watch the salt...I bought some uncooked kim chi from a local Fresh World, and the salt messed me up (table salt kicks my kidneys, hard).
You don't want to eat it by itself because it is supposed to be eaten in small quantities with food, to aid digestion. You can make your own mild kimchee to eat alone - it is very easy and cheap.

Kimchi is completely raw, and most Koreans eat it every single day. Most Kimchi that I've seen at Korean grocery stores are completely vegan. The most common kimchi recipe is made of bok choy or radish, green onion, garlic, salt, and red chili flakes.
