Ok,

I got Alissa's book. Wow this will make things much easier.
It creates a few questions.

In her list of essentials, I would prefer to buy a fair amount of raw nuts and seeds and have them on hand, so if I get hungry I can snack on nuts or throw together a quick recipe. How long can I safely keep raw nuts? How long before they go rancid? Anyone have experience using foodsaver canisters? Would that extend how long I could keep them on hand?

What about vegetables? I have some green bags, but whats the longest I should go with vegetables in the refrigerator? I know the longer they are in the refrigerator they are losing some of their enzymes.

nuts can keep for quite a while in the fridge. they will go rancid at room temp very quickly. If you start drinking green smoothies, and having lots of large salads, you shouldn't have them long enough to go bad. I would only buy enough for a week at a time of the perishable foods. Bananas, and fruits can be frozen if they get ripe too fast. perfect for smoothies. good luck in your raw journey.

I agree, only buy enough produce that could last you a week. Sometimes I even go out to the stores a couple times a week, I'd rather do that then have produce go to waste - I don't like to freeze that much because the freezer and I haven't been getting along...
I use the green bags too they work great ! I also use glass vacuum seal containers. We have 2 medium sized fridges we use. One for nuts and seeds and ... I'm sure there's other stuff in there too .. can't think of what else though lol.. and the other one for produce. Oh right its the ACV and other packaged foods that my boyfriend doesn't like to see but I like to use on special occasions that is in the nut n seed fridge .. :o

I buy my nuts in bulk and keep them all in the freezer. They keep for quite a while in there. I have never had a problem with them going rancid on me.

I perfer to Freeze things that have a Short shelf life. Always when in doubt......I Freeze. You can Freeze just about everything.

I buy almonds, raspberries and blueberries 20lbs at a time. The almonds keep very well in the fridge. The berries do just find in the freezer. I make smoothies almost every day with these. Yum! If anyone has a great source for bulk frozen fruit please let me know as my source is too expensive. It costs me about $150 for the raspberries and about $180 for the blueberries.
