I had a great day today! I went to my local neighborhood co-op. I got some really interesting things, but in the long run, their renovations seem to have increased their pricing and I simply cannot afford them. I give that experience there a 6 out of 10. I did buy a fridge magnet that says this is a no meat zone! LOL
I didn't have a 100% raw day, but I did have a 100% vegetarian day. I'm kind of nervous because I have resolved to clean out my kitchen when I return from my trip and my cupboards are going to be BARE when I get rid of all that crap in there. I'm sure that will help a LOT with keeping meat free and as raw as possible.
I can't believe how dumb I was that I never looked up youtube for raw vegan cooking before. This transition is I think going to be easier than I thought because I didn't realize how easy it is to stay ahead of the game with this. I can keep a lot of veggies and fruits precut so that I just have to throw something together. No boil overs on the stove, no sticky crap on my dishes. Just fresh uncooked foods.
Then the best part...my "I hate vegetarians" daughter came home from school and started picking at the grape tomatoes that I bought. So without saying a word, I started fixing a kale and avocado salad with tomatoes and pepers and olives. She came sniffing around so instead of starting a whole big conversation, I immediatley put her to work helping with the salad. She took over half of it when we were done! So I quick made a little bit more for me and before I was finished, she came back into the kitchen and asked if she could have half an avocado with lime and some more tomatoes and STILL finished them before I finished preparing my serving of salad and said she would love to take this to school for lunch! Can you tell I'm feeling kind of smug right now...
