and so easy too:
- approx. 1/2 cup(or more)each of chopped parsley and cilantro
- small clove of garlic
- a tsp. or so of chopped fresh jalapeno pepper
- juice of half of a lime
- half an avocado
- salt+pepper to taste
Food process the herbs, garlic, jalapeno, and lime juice, until finely chopped. Then add the avocado, salt+pepper and food process a bit more until just past chunky. This makes a chunky-ish green spread that is FAB on some dehydrator crackers(I had my golden pepper-black sesame seed ones on hand), and a bowl of greens with chopped tomatoes. That was my divine lunch!
This would be good in veggie wraps or on onion bread too, with the chopped tomatoes on top for a great open-faced "sandwich".
