I'm new to eating raw. I am learning that walnuts (or nuts in general) ought to be soaked. I gather that soaking for 6 hours is enough for walnuts. Should I soak at room temp? or refrig? Should I cover or leave uncovered? After soaking, at what temp should I dehydrate walnuts? And for this, do I need special equipment... like a dehydrator? And if I don't dehydrate them, what are the consequences? or what are the benefits of dehydrating, for that matter. Please help! Thanks!!!

I soak walnuts often for pate. I soak them in a glass bowl with a paper towel over the top on the kitchen. I then dump the water, pat them dry with a towel and set them on a plate to fully dry. I don't have a dehydrator so I don't make anything that would need that. Once they are dry I make the pate. Do you have Alissa's book? You can make lots of things without a dehydrator.

If you do not have a dehydrator but want to soak in bulk you can freeze them and just use them from the freezer as you want them.

For nuts/seeds that sprout (sunflower, almonds, etc), I soak at room temp. For those that don't and have high fat content (walnuts, macs, etc) I soak in the refrigerator.

Good to know. Thanks.
