View Full Version : Lunch so yummy I felt guilty!!!

I made some collard wraps with a curry almond pate, guac, baby arugula, and pea shoots. 4 small wraps=1 huge collard leaf.

small dandelion side salad with just a bit of a creamy cashew dressing.

In the middle of the meal - I got a pang like "I shouldn't be doing this!" - my meal was so yummy - some part of my mind thought I went off "the program" - I had to chuckle to myself when I realized it was all ok!!!!

This is definitely getting easier - and yummier!

Sounds delicious! I'm guessing that the curry almond paste is...ground almonds with curry powder? :p (still a rawbie) Just the thought of that makes me salivate.

I just soaked the almonds over night (~1cup), added a sliver of onion, dash of curry powder, garlic powder, S&P, and started up the food processor. scraped down. I had a 1/2 of a large red pepper, cut into strips, and dropped them down into the food processor, the red pepper and the recent soaking of the almonds gave it all the moisture need to process nicely.

I wouldn't yet call this a "finished" recipe - tasted a wee bit dry - like I'd like to drizzle in a Tsp of olive oil - but I was making it this am after my wheat grass shot and didn't want to taste and tweak!

But the guac made up for any lack there, and the pate was a beautiful color between the red pepper and the curry powder.

So glad you made me elaborate - I want to make this again and forgot what I did, so I searched for this thread!!!

Tonights dinner will be the same - if some of my avos are ripe, substituting sunflower sprouts for the pea shoots - if those grow a wee bit more whilst I'm at work. otherwise - combo.

Guilt is a weird thing. I constantly feel guilty for spending money on organic food and raw ingredients... and then I think: what else is worth spending money on?
But whenever I feel guilty while eating something I just have to stand up and realize that my stomach doesn't feel heavy and upset, the way it did when I used to eat big cooked meals. It is wonderful to know that we feel good.
