I want to incorporate these into my diet, but I don't like them plain.
What are your favorite ways to use these? can anyone recommend any outstanding recipes? :)
oh- and I didn't mean they necessarily needed to be used together - :p

I have placed chopped up beets into my food processor (pulsing) and incorporated them into the chili recipe. Also, I use my saladacco and make angel hair out of them and top with marinara sauce. You can also top a salad with angel hair beet pasta for a very decorative effect.
Radishes, I slice thinly and top with raw cheeses and/or spreads.

I juice both, but with several other ingredients, like carrot and apple as the basis of my juice, then adding stuff like bok choy, celery, sweet potato, summer squash, zucchini, fresh ginger, fresh (hard, not too soft) pears, etc.
I just throw in a handful of radishes, or one small beet, and it doesn't lend a distinctive flavor to the juice, but the color is wonderful! Plus, just becaus I can't taste it doesn't mean it ain't working for me!

question on the angel hair pasta idea -
should beets make up the whole batch of pasta (aside from the sauce) - or should I use a combo of carrots or zuchinni? beets seem to have an overpowering flavor.
on the idea of beet puree as in tracyinfo's chili-
can someone suggest some fruit/vegetables, herbs/spice and possible oil or nuts/seeds that would compliment beets and make a nice soup
I'm thinking...

carrots ?
basil ? parsley ?
garlic
lemon
celtic sea salt

Something simple you can do with a beet is shred it over a salad. You can use a gold beet too, less mess.

Bright Beet from Rejuvenate Your Life by Serene Allison
2 huge beets or 3 large ones
1/2 Vidalia onion
1 1/2 tsp. sea salt
12 tsp. cayenne
3 level tsp. cumin
1 big lemon, squeezed
1 tsp. oregano
1 c. almonds
Place beets and onions in Vitamix and whiz. Add rest of ingredients and whiz until smooth. This can be stuffed into veggies or eaten with raw bread or crackers. I often replace the beets with 4 large carrots for an orange colored dip.

When I do the angel hair pasta, I usually mix it with other types of veggies. The zucchini is soft, whereas the beets and butternut squash are harder. Also carrots are absolutely delicous, but you get a workout with the saladacco!

Try using the seeds of each to sprout...you can still get major benefit from them in this form.
If you are using the whole beet, we like the golden beet best...subtler, more pleasant flavor when juicing.

sprouting the seeds, can I get those at whole foods or order by mail only?
I tried the red beets as angel hair with carrot and zuchini angel hair and an improv'd sauce - it was pretty good! the beets would be strong alone. I'll try golden beets next time -
the pasta sauce:
I used whatever was on hand and did not measure.
(approx. measurements)
1/3 cup pumpkin seeds finely ground
3 tablespoons sesame seed finely ground
1/3 cup olive oil
3 tablespoons apple cider vinegar
2 tablespoons agave nectar
fresh basil chopped
2 teaspoon onion powder
1 teaspoon cayenne
celtic sea salt to taste

Many whole food/natural stores have seeds to sprout. You can get them mail order from www.sproutpeople.com...very reasonable prices and a great list of seeds.
