If soaking overnight, do they need to be refrigerated? Covered or uncovered? Can you put these in a dehydrator to make them warm? If you can, what temp and for how long? Will it enhance the flavor by putting them in the dehydrator? (well, I figured with them sitting overnight, the flavor will really be enhanced but just a question I have anyway)

I put mine in the fridge over night (covered). I don't dehydrate mine. They would lose their crisp.

Thank you very much for the reply! I'm making these tomorrow and letting them soak overnight so I can have a different kind of treat on Saturday. And am really, really, really looking forward to chowing down on them!

One more question I forgot to ask: can you use raw potatoes as well? (I love raw potatoes) Would it work the same or not?

I would soak them in lemon juice water first.

yes! I was wondering the same thing?
all the ingredients sound like they would go well on a variety of vegetables - however I have never had jicama and am not sure what, if anything, would give a similar texture-
do any other vegetables - such as sweet potatoes, or root vegs. -work in place of the jicama ~ the reason I ask is because I try to stick with organic, and all year the jicamas have been conventional and imported...

I made these last night and let them soak overnight. Yummm!!! Best when dipped in guacamole (which for me is avocados and big onion chunks mixed together) This is dessert tonight...
