Lemon juice, straight out of the lemon is yummy.
No fat like no avocado fat? No nut fat?
If you are allowing them, do lemon, avo, nut and add some water to thin it and season to taste.
Lime is also VERY good.

i find orange juice is a good base for fruity dressings, you can add strawberries or mangoes or dates to it. I like sweet more than savory so i dont like spicey dressings

Using lots of different ingredients and/or spices can make a salad flavorful. Seaweed & cayenne pepper are two I like.
Celery Tomato Dressing
½ -1 Tomato
1 Celery stalk
¼ cup Orange juice
Garlic Clove
Blend.
Celery Tomato Dressing 2
Tomato
1 Celery stalk
Optional: Garlic, Herbs
Blend.
Mango Tomato Dressing
Mango
Tomato
Garlic
Blend.

Are you including white coconuts? If so, try blending the water and meat, with orange, lemon or lime juice, garlic and gingerroot. Let it sit in the fridge to thicken.
The following Oil-Free dressing takes some time to throw together but it is intensely flavorful. I've used it as a salad dressing and a soup. A missing ingredient or three doesn't make much difference.
Start with a cucumber and take it any direction you want. :)
Blend:
cucumber
radishes
parsley
fennel
spinach
basil
rosemary
dill
lemon juice
lime juice
sea salt
garlic
ginger
red jalapeno
cumin
turmeric
honey
water if needed
Optional:
pinenuts
olives
avocado

Mango Tomato Dressing can also be a soup.

My BF's fav is mango and strawberry right now. Chop it up in the food processor like a salsa.
Right now I'm doing no fat too and I am obsessed with this dressing:
Lime juice
jalapeno
cilantro
cayenne
chili powder

Sometimes the Best Dressing can be No Dressing. Just a Mixture of Greens and Vegetables and they marinate it their own juices.

I like chia seeds blended with lots of water, dill, lemon, garlic. Very tasty.
