View Full Version : Making mustard in high speed blender

I had made raw mustard last june by grinding mustard seeds in a coffee grinder and then mixing it by hand with apple cider vinegar and a bit of salt, it was good but wasn't smooth at all. I had made 3 cups and had a 2 cup jar I haven't even touched yet so I scooped it into my Blendtec and blended it on speed 10, I had to add quite a bit more vinegar as it seemed to thicken it as it blended. I now have super smooth mustard like the store bought one.

I'll try to make another batch by simply blending mustard seeds and apple cider vinegar and salt and note the proportions since I never measured it.

I'll have to buy vinegar and probably mustard seeds to first as I'm low on both. The mustard also gets better and looses it's spicy taste as it ages so it would be good to start aging another batch now.

I'll post back with the proportions once I figure it out.

RAW MUSTARD

1/4 C yellow mustard seeds
1/4 C brown mustard seeds
1/2 C apple cider vinegar
1 clove garlic

i put it all in a small bowl and let it sit in the fridge for 2 days. the seeds will soak up all the vinegar. i but everything into a blender and ran it until it got to the consistency i wanted. i had to add a lil more vinegar and some water to make it go.

beware, its potent but iz guud

Thanks for posting that recipe. If you want it to taste like regular store bought mustard you need to let it age at room temperature for 1-2 months.

I just got more mustard seeds and ACV today so I was finally able to measure them.
2 1/2 cups apple cider vinegar
1 cup yellow mustard seeds
1 tsp sea salt

Blend all ingredients in a high speed blender until smooth. You may want to wipe the sides after blending a bit if you want it perfectly smooth with no seeds left. Transfer to a glass container and let age at room temperature for 1-2 months (this makes it taste like the store bought mustard, it will be extremely spicy if you don't age it). I have some that's been aging 10 months in the cupboard and it's really good.
