Just ordered a big amount of dates from the Date People (Super NICE) and was wondering what is the best way to store them.

Welcome Kristi.

Long-term: refrigeration or freezer is good. You can store it at room temperature in an airtight container in a cool, dry place for up to 6 months.

I use my Food Saver and toss them in the freezer. The frozen ones taste every bit as good as the day I bought them. Yummm - dates! *Ü*

I don't like keeping mine in the fridge. They have lost their softness when I've stored them in an air tight glass container in the fridge.
Now I store them in an air tight glass container in the pantry. They never seem to last long enough to go bad.
I order a flat case about every 4-6 weeks.

Divide them up......Store the ones you are eating on and going to eat within the next few month in the Pantry, some on the counter in a container for easy access as snacks. The rest store in an airtight container in the Freezer.

I assume we are suppose to remove the pits before freezing?
And can I ask how much is a case of dates? I just paid $9 for 1 pound!

Hi sprouts2go ~ I do not remove the pits before I freeze dates.

Wow - our health food store charges $3.69 per pound for organic dates! *Ü*

WOW ! Thats so cheap!
Here I've paid 12$ a pound. Then I found another store that sells them at 9$ a pound which has been the cheapest so far.
We just buy them by the case now. 94$ for a flat case.

When I buy them from the bulk bin at that store, I think they're pitted and dehydrated, right? Before I use them in recipes that just say "dates", should I soak them in water for a while? For example, I want to make some crusts - so would I soak them first, then (if it calls for a measurement rather than so-many-dates) measure after soaking?

There are dried dates and then the fresh dates. The mejool dates are yummy. Taste like caramel. They have the pits in them.
