I have had nut based meals twice and both times I felt miserable. I was bloated and did not want to eat anything the next day and only minimally the next.
I had Mock Salmon and Pad Thai on those occasions(both of which were delicious and I ate small amounts). I can handle nuts without problems a few at a time throughout the day. I do not have a nut allergy. It just seems like all those nuts in one meal is too much.
I want more variaty but can't seem to add lots of nuts.
No dehydrator here.

Yeah, I don't tend to feel great after eating nuts either. They just don't make me feel good. i can eat them in small amounts if in a dish but i prefer to eat them whole if I do. I don't generally eat them anyway. I think walnuts and brazil nuts go down the best. Not so much almonds, cashews.

Nuts can be hard to digest. I find eating them with greens make them much more digestable. The pad thai was too rich for me, but I love the pad thai sauce as a salad dressing over mixed greens. You can use digestive enzymes when you eat nuts. Be sure to soak them, then rinse.

I would suggest not eating nuts. Do seeds do you the same way? I can't digest nuts well either. I can eat an occasional small amount of pumpkin and sunflower seeds (soaked), but that's it. I just get my overt fats from avocado and coconuts and stay away from the nuts.

I steer clear of nuts as well.....they are not easy to digest.... I do love Lara Bars though, and have them on occasion, but I would never make a nut based meal....just way too much density

oh, and check out Ani Phyo's Thai Noodle recipe on You Tube...it is yummy! there's a little raw almond butter in the sauce, but it is not a "nut based" meal...

I love nuts, but I react to them (and all other concentrated protein) with varying levels of eczema (usually raw nuts/seeds cause the most mild of all my reactions, small dyshydrosis on my hands & a little rash on my face of tiny, itchy lumps which are gone the next morning). I am still eating them, as I have found I won't stick to a raw diet without them.

A nut-based meal would seem like a bit much...only when I was pregnant could I digest more than a small handful of nuts at any given time; same goes for seeds. The creamy goodies for special occasions...definitely take enzymes with those & drink something acidic, like strong lemon water or kombucha (if you are into the latter, I know some people aren't).

Vegan enzymes, lovely little capsules or tablets containing, for nuts, protease (often in the form of bromelain or papain from pineapples and papaya, respectively) to break down proteins & lipase to break down fats. Found in any good natural food store with the supplements.

The nuts should be soaked overnight...you can then dehydrate them to make them crispy or just use them wet, depending on your recipe. Soaking deactivates the enzyme inhibitors - in essence, it "wakes up" the nuts/seeds from their dormant state (this only works with raw nuts, of course, no waking the dead, like the poor almonds :().

Yeah, some people can't handle lots of nuts, and it probably isn't the aboslute best for you except on occassion if you're really craving them. However, I absolutely love nut-based meals... and actually lose weight when I eat them. Seed-based meals give me problems though, bc I get addicted to them (like seed cheeses). I try to stay away from sunflower seeds bc something in them is just extremely addictive to my body and I'll just eat and eat and eat. You'll learn what raw foods work for you and what doesn't. Everyone is different. A variety of recipe books is a good idea.
