I am planning to go to a raw food meetup group in a few days for their monthly meeting, and the theme is Mexican food! I'd like to try the recipe ahead of time to make sure I like it. Someone else is already bringing several kinds of salsa.
Does anyone have any awesome Mexican food ideas that wouldn't totally break my budget? Please post recipes or links to recipes so that I can experiment and find my favorite.

Taco Meat
1 cup Walnuts
6-10 Sundried Tomatoes, soaked
1-2 Tbs Olive Oil
Chili powder
Cayenne powder
½-1 tsp Salt
Optional: Dried mixed spices, chopped onion, tomatoes, cilantro
Blend. Serve in lettuce wraps, on crackers, in salad. Goes well with salsa.

I just made a stuffed pepper the other week. They were really good. I made some walnut taco meat and then stuffed it in halved spicy peppers...I used a medium size banana pepper. But you can use any type of pepper..I just love things spicy. ;) Then...I put the stuffed peppers in the dehydrator for a bit while I made a cashew sour cream sauce....lots of lemon or lime juice in the sauce for that sour cream tartness. :D
Once my peppers were warmed a bit I topped them off with the cashew sauce and ate it up. :D You can also finish it off with other stuff like...cilantro, salsa or hot sauce....etc.. etc...

I would make nut cheese with an added hot pepper and serve it as a dip. Either don't dehydrate it at all or if too runny, just partially dehydrate it. Or you could partially dehydrate it and stuff it into baby vegetables.

This salad is great by itself or with mexican flax crackers
Corn Salad with Cilantro Dressing
Salad:
4 fresh Corn Cobs, stripped
1 diced Red Bell Pepper
1 Avocado, cubed
Dressing:
1 minced Garlic
1 small Onion
½ Jalapeno Pepper
1 small bunch Cilantro
1 Lime, juiced
½ tsp Sea Salt (or to taste)
2 tsp Flax or Olive Oil
½ tsp Cumin Powder
In a medium bowl, combine the corn, red bell pepper & avocado. Set aside. In a blender, Vita-Mix or food processor, combine the dressing ingredients. Pulse until the cilantro is finely chopped. Mix the dressing with the salad. Enjoy!

Here is a very zesty quac recipe...
3 avocados chopped chucky
1 lg tomato-can deseed or use it all
1/4 c. purple onion
1/2 lemon juiced
1 tsp cumin
sea salt to taste
I make this weekly and vary the recipe depending on how much kick I want....also add cayanne pepper (SP?)

The raw potluck was today, and there were so many people there! Dr. Craig Sommers was there and talked for 1 1/2 hours about various things, he is the author of "Raw Food Bible." Does anyone have that book and recommend it?
The food was wonderful! My mom and I went together, so we took two dishes - the corn salad with cilantro dressing and taco meat with sour cream & diced tomatoes wrapped in lettuce leaves. I especially liked the tacos, and am planning to fix them for my family one night this week.
