View Full Version : almond milk - what to do with the leftovers of almonds??

hi, for the first time i prepared almond milk ...
i took around 350 to 400 gr almonds, let them soak overnight and peeled them off by hand. then i put the almonds in a blender, added some water and pureed them ... next i emptied the blender into a muslin cloth and squeezed out the milk ... ok ... so far so good ... but now i have so much almonds leftover ... what am i going to do with them?? i don't really want to throw them away. i heard one can make cheese of it ... how? and moreover: what else can i do with it? any suggestions??

You can use it as a pie crust after it dries or make almond joy bars.

You can dehydrate it and use it as almond flour to make a variety of things. Russell James' delicious Mediterranean Almond Bread recipe says:

"You can make almond flour a number of ways. My favourite is to save the pulp from any almond milk I make and dehydrate it so I can keep it in a glass jar until needed. You could also use the almond pulp wet. Another way would be just to grind some almonds into flour in a high powered blender or coffee mill."

i have so much pulp, it will last me for another two portions at least :D

You do not need to peel them, I think a lot of the nutrition is in the peel so it takes a lot of time just to make them less nutritious. In case you aren't aware all almonds from USA must be pasteurized with cancer causing chemicals since 2007, even those labeled "raw" have gone through this process. I now get almonds from spain or italy but very rarely as they are much more expensive.

As a cheaper and simpler alternative you can make walnut milk, it has the great advantage that it does not need to be strained so it's ready in seconds.

I no longer make almond milk, since I don't need it for drinking, and don't make many recipes anymore. when I make my green smoothies, I just throw in a handful of almonds along with the rest of the ingredients, and the vitamix takes care of everything for me. no more straining, or leftover pulp. :)

I agree with dehydration, making Flour. you can also make Treats like Cookies right after you dehydrate. Adding it to your Smoothie is always an option.
