i'm going to make some cookies this weekend from sweet gratitude....

how do i do almond flour and get the right consistency???

i want to soak em but will i get mush????

whenever i try to dehydrate soaked almonds they don't get dry forever!

i don't soak them, most almonds are pastuerized now anyways and wouldn't sprout.

I bought a $10 coffee grinder and put them in and grind it to flour. Saves hurting my vitamix.

I make almond flour by:

*blend 1 cup almonds with 3 cups of water
*strain nut mylk with nut mylk bag (store almond mylk in the fridge for later use)
*dehydrate almond pulp overnight spreading it as evenly as possibly
*grind dried pulp in coffee grinder or food processor.

I find that when you do it this way it tends to be a bit to oily or wet. If you do it with the steps I outlined above no only do you get a real flour texture but you also get usable almond mylk out of it. You stretch your dollar and get two uses out of the same amount of nuts.
