Very Best Peanut Sauce
• 2 tablespoons natural peanut butter or almond butter
• 2 tablespoons apple cider vinegar
• 1 tablespoon honey or other sweetener
• 1 generous tablespoon sesame oil (the dark stuff is not raw, but I make an exception because it's so darn good!)
• ¼ cup shoyu / soy / tamari
• ½ cup olive oil or safflower oil
• 2 cloves garlic
• 1 knob (1 inch) peeled ginger
Throw it all in the blender & let it go until it's smooth. If you don't have a blender that can handle it, you can shake it up in a screw top jar; just mince the garlic & finely grate the ginger). Here are my favorite things to do with it...
* mix together a bag of cole slaw & a bag of broccoli slaw, along with a julienned red bell pepper & a bunch of sliced scallions & toss with the dressing
* top shredded veggies with the sauce on lettuce leaf "wraps"
* use as a dip for celery
* spread the recipe around RFT & hope other people enjoy it too!
