This is From Victoria Boutenko's latest newsletter. I'm going to try this myself.

================================================== =

Last summer at the Raw & Living Spirit Retreat, my friend Gabrielle Chavez introduced me to a green smoothie made with an avocado pit blended as a part of its recipe, Since then I have been experimenting with adding avocado seeds to my smoothies, and now I use them frequently. Here is some information that I gathered about the nutritional properties of avocado seed.

The total antioxidant capacity and phenolic content of edible portions and seeds of avocado, jackfruit, longan, mango and tamarind were studied. … The seeds showed a much higher antioxidant activity … than the edible portions. The contribution of all the fruit seed fractions to the total antioxidant activity … was always more than 70%.

“Avocado seed contains relatively low amounts of calcium and magnesium, somewhat higher amounts of phosphorus, and high amounts of potassium.”

The seed of the avocado contains tannins, and these make it bitter or "puckery" to the taste. And some of the tannins can be mildly toxic, though an individual would have to eat a lot to see any effects, unless that individual had a food allergy.
Dr. Tom Wu: When I eat the avocado I always eat the seed. It is packed with very good nutrients. It has the life force. It is a very high Qi food! It’s also the highest in soluble fiber. This soluble fiber binds to the fat and excess cholesterol. Then we can lower cholesterol and improve heart function naturally. We can improve the blood circulation by pulling out all the fatty deposits in our circulatory system with the soluble fiber of the avocado seed. Soluble fiber is very difficult to get in our diet. Oatmeal has some, but it cannot compare with the avocado seed. Any heart disease patient must eat the avocado including the seed.

Based on these and other facts, I concluded that adding avocado seed in small proportion can be beneficial for nutritional needs. Also I have noticed that it helps to make a consistency of some smoothies less frothy, as in case with green smoothie that contains apples, cucumbers, or pineapples. I like to add ˝ half avocado seed per 32 oz of most of my green smoothies; then it doesn’t affect the taste of smoothie but makes it a little thicker and provides additional nutritional benefits. Here is a sample recipe.

Sweet and Sour Delight:

4 Fuji apples, sliced
2 medium lemons without peel
1 banana, peeled
1 bunch parsley
1 cup spinach
1 stalk celery
Small piece ginger
˝ avocado seed

Yields: 32 oz

Sounds good. I wouldn't go through the hassle anyways due to my high potassium content.

Thanks for sharing that information. I'm not sure I want to eat one, but it is interesting. After you try it be sure and post what you thought of it

I also got this email also. I plan to try it soon. I have thought of it but I was concerned about the blades on the Vita-Mix.

Ya so am I...
Avocado seeds are pretty solid and tough. I don't want to ruin our vita-mix.

If someone has tried this please let me know if your vita-mix survived! Thanks

Yeah i got that yesterday in my email. I don't want to hurt my vitamix. I don't know why she doesn't mention how you cut or blend the seed at all...

I would like to subscribe to that. I am going to see Victoria and Valya Boutenko tomorrow night for a 3 hours presentation called "Green Smoothie Revolution". Which if I remember correctly is the title of her new book. If I get the opportunity I'll ask her how she cuts the seed in half. Any other questions?

I was concerned about the blades on the Vita-Mix.

I too have a Vita-Mix. I would like to think the Vita-Mix is in the same league as a Blentech. After watching the Blendtech make an iphone or marble smoothie, I think we are safe.

Yep, I think you will feel a little safer after watching these:

It said to use half, so if you cut half, you can cut it again. Still haven't tried it.

Now..now, FreshLight, that's why we have knives, Vita-Mix and Hammers, to do what our teeths can't.

Well, I don't use them :) You can open the coconuts by dropping them on the floor/ground ;)

Back when I got my VitaMix, one of the demos was to throw in some of those wooden play blocks and reduce them to sawdust.

Somehow, I think the VM can handle a measly avocado seed...

I tried this....once....

I found it to be very bitter and I had to dump my green smoothie - ugh... I also tried blending in our home grown grapes with seeds - same deal, very bitter - out went the smoothie. *Ü*

I cut the seed in half today and put them into two smoothies.

Could not taste it or hear it being blended (VM is a loud blender anyway).

It was however, an experiment cutting one in half. I took one whack with a large knife just to get the knife stuck into the seed (on purpose). Then I started whacking down with the knife onto my cutting board until the seed split. Of course one half went here, and the other over there. They were definitely runners. I just need to figure out how to coral them as it splits.

Has anyone else noticed . . . . that nothing rolls across the kitchen floor better then a loose avocado seed that you've lost control of.

I didn't have to ask the question at Victoria's talk today. She brought it up by saying that she received a thousand emails about this, many with questions on how to cut the avocado seed in half. She said don't remove the seed first, cut it in half when cutting the avocado. She must have a very sharp knife. She also said she got questions about whether the seeds could be frozen and saved for later. No, no, no. Just have one a week or so, it's not an everyday thing.

Hmm i still don't know that i want to start experimenting with foods we couldn't eat in nature. I'm already getting more greens in my smoothies and i'm going to work on that for a while upping the fruits and greens.

I have squirrels and racoons that eat anything. They will not eat the avocado pits - which is good because I can plant them and raise avocado seeds.

Animals - being much smater then humans when it comes to food - are my advisors. If they won't eat it then it's not worth the effort on my part. Besides, they make nice trees.

Even the ants won't eat the seeds.

I did this for a few days. I couldn't really taste the avocado pit, but it made my smoothies too gritty. If there were some huge benefit to it, it'd be OK, but there didn't really seem to be, so stopped doing it.

Perhaps a bit off-topic, but the blender guy has the coolest job ever!!
I think blending random things for a living might even top off being a Myth Buster or Charlies Angel, my two dream professions. (well, apart from blending random things, that is...)
