Though I'm only on day 11 of my own raw food challenge, I've already stumbled upon two of the best desserts I've had in quite some time. I thought that others in the community with a major sweet tooth (like myself) might appreciate the recipes.

The first, a rich, velvety and delicious chocolate mousse came from a recipe here http://www.reneeloux.com/recipes/recipe.php?id=19. I pretty much had to stop myself from devouring the entire bowl on first contact, and this is coming from someone who doesn't even like mousse! Really, the dish is more of a pudding/mousse/brownie batter cross, but scrumptious and healthy never the less. It's best topped with raspberries, cacao nibs and some fresh mint (in my humble opinion).

The second is a creamy banana "ice cream" that was incredibly simple to make! The ice cream recipe came from here, http://vegweb.com/index.php?topic=14838.0. Rather than top my banana ice cream sundae with pineapple and the chocolate sauce prescribed in the recipe, I showered mine in blueberries, chopped pecans, and a much simpler chocolate sauce made with 1/4 cup of maple syrup (or other sweetener) mixed with 1 1/2 tbs. cacao powder. It turned out incredible!

Oh, and if you're still a non-believer, here's some photographic evidence:

Thanks for sharing. I just wanted to point out the first recipe is far from being raw or healthy. Maple syrup is boiled at high temperatures for several hours (it starts as water and must be boiled for hours and hours to evaporate enough water for it to turn into a sweet syrup, maple syrup is concentrated 40 times compared to the natural maple water). The evaporated cane juice or organic sugar is also boiled at very high temperatures. Sugar (whether from maple syrup, sugar cane, etc.) is one of the most unhealthy things we can eat, it has been proven to be more dangerous than smoking and just a few spoonfuls a day increases cancer, heart disease and diabetes risks dramatically.

The cacao powder they recommend is also not raw but in this case it only means that lots of nutrition and antioxidants are lost, it's far from being bad like cooked sugar.

I'd recommend using agave nectar or raw unpasteurized honey as sweeteners. They still aren't healthy, but far from as dangerous as cooked sugar and maple syrup.

I appreciate the in-depth information and advice. For the first recipe I did end up omitting the additional cane sugar and cut the maple syrup with agave. I'm sure it would be very easy for the maple syrup to be completely replaced with agave if a little extra water was added. The same goes for the chocolate sauce in the next recipe.
