After you have fermented a big jar of kim chi and it still has some of the cabbage juice in it, what do you do next? Pour it out and put the jar in fridge? How long does it keep like that? Just want to make sure i dont mess it up

you can save it to make kimchi with again or use it as a salad dressing or anything you like. - maybe even a flavor agent for some raw potstickers/dumplings or a dipping sauce for them or some nori wraps... they also often use it to make kimchi bokumbap, which is kimchi fried rice... which of course can't have that.. lol but you could like i said put it on your salad, save it for making kimchi again, etc..
just put the lid on the jar & store it in the fridge & it'll keep 6-9 months or more.
