View Full Version : Ideas for Strawberry Recipes?

Hello -

We picked over 50 pounds of strawberries yesterday, yum! I'd like to get some new ideas for recipes to use as many of them as we can while they are fresh. We're eating them plain of course, and also in green smoothies. I'm also trying a recipe for raw strawberry jam I found - those are in the dehydrator right now. And I can make a raw strawberry shortcake, and also make macadamia whipped cream to serve with strawberries in a bowl. Any other ideas? We'll freeze whatever we can't eat fresh for smoothies later on.

I have some fruit leather in the dehydrator right now. This is my first run, so I'm not sure how it'll turn out. I used about a pint of strawberries, blended up & then mixed in 1 cup of applesauce. (Of course, made from blending apples.)

That's all I can come up with for you. I'm sure there are plenty of experienced & very creative people on here who can be of more help.

3 cups strawberries, hulled
1/2 cup cashews
1/2 cup pitted dates
1/2 vanilla bean
2 tablespoons coconut oil
2 cups water

Put strawberries in the blender, then the cashews, dates, vanilla bean, oil and water. Blend until smooth

Thanks to both of you - I've wanted to do some fruit leather, but have never tried it. My children would love it I'm sure! The shake sounds delicious, I'll have to do that one very soon.

maybe you could make like strawberry salsa, kind of like mango salsa and eat it over salad.

That would be amazing... it's $5-$7 for just a pint of organic strawberries here! I use frozen ones in my shakes cuz it's cheaper.

Ooh i made strawberry parfaits the other day too,

Topping:
1/2 cup sliced strawberries

Strawberry Syrup:
1 cup strawberries
1/4 c agave syrup

Kream:
1 cup cashews
1 Tablespoon vanilla extract
1/4 cup Nutiva Coconut Oil, liquid
1/4 cup filtered water, as needed

Garnish:
Mint

To make your syrup, place strawberries and agave in your blender, and pulse to mix. Set aside.

To make your kream, place cashews, vanilla, and Nutiva Coconut Oil in your blender. Add water, only as needed, to blend into a smooth pudding texture.

To assemble, place kream in 2 glasses. Top with sliced strawberries. Drizzle on your syrup, and garnish with a sprig of mint.

Strawberry Ice Cream???? Use this basic recipe, but leave out the cacao and cacao nibs OR make chocolate strawberry ice cream!!!

Raw Chocolate/Chocolate Chip Ice Dream
2.5 cups of filtered water
3 handfuls of cashews - maybe 1.5 - 2 cups?
2 tablespoons raw cacao powder
2 tablespoons Alissa's coconut powder
10-12 medjool dates
1/2 - 3/4 cup of cacao nibs
Squirt of agave nectar

Put everything EXCEPT the cacao nibs into a high-speed blender (like a Vitamix-Mix) and blend until creamy. It will be thick.
Put into ice cream machine, adding the cacao nibs and use the ice cream maker as directed.

At first it's like a soft-serve ice cream, but this freezes well. It is YUM-OH!!!

Blend them and freeze them for use later. Or freeze whole!

put them in the freezer with a banana, then the next day blend them together and make ice cream! =D

i would just eat them plain. yum!

I can't get enough of the white chocolate strawberry cheesecake by Vanessa Sherwood. I've made it every other week since strawberry season started. I would make it every week if I didn't have to work overtime. All my co-workers wanted the recipe after tasting it. So easy to make!!!

Plus it keeps really well in the freezer. I also put the filling in bite-size silicone molds and have them around for when I need to pop one in my mouth. Yum!!

I'm sure you can substitute coconut butter for the cocoa butter.

Thanks so much everybody! I have copied all of these great ideas and will be trying some of them in the next couple of days. I'm going to HAVE to make that cheesecake!

I made a pretty simple strawberry pie last weekend for my family who are not raw. They loved it.

Crust:
1 cup almonds
1 cup walnuts
6-9 dates

Blend nuts then add dates. Blend till crumble sticks.

1 pound strawberries
2 dates
1 tablespoon honey

Blend till smooth. Place in bowl.

3/4 pound strawbrries

Shred in food processor. Add to bowl. Mix together. Pour over crust.

Top with slices on strawberries.

wow i just thought of a really good idea.

you could make a strawberry salsa.

like...

strawberries
kiwi
tomatoes
mango
orange
onion/garlic (optional)
cilantro
celery
lime
avocado
toss!

if you want, you can thinly slice a tiny bit of beets, and then it will bleed into everything and make everything turn beautiful reddish pink.

THEN... you could put the salsa over an organic baby spring mix and some alfalfa sprouts, and make a salad! if you want you could even blend some strawberries together with a banana and maybe an apple or a peach and make that into a sauce dressing thing for the salad.

then you can put it in some collard greens and wrap it up burrito status.

then you can garnish that with strawberries on top and a piece of cilantro.

then for dessert you can make a smoothie with strawberry and peaches.



whenever i have strawberries i always want to make stuff with them, but i'm never patient enough, and i eat them all before they get put into the recipe. =(

you can make a syrup out of pineapple juice and orange juice blended together. i used to LOVE fruit cocktail when i was little. we got it in the big can from costco.

this makes for an interesting combination. the strawberries mixed with sweet peppers and grapes and tomatoes. hmmm... P=> maybe add a cilantro garnish on the top.

or you can make one like
