Well I love them, but are they possible to eat raw? How would you?

I sometimes have eaten them raw and dipped them in dips, but I'm not sure if I like the taste of artichokes when eaten raw

I bet you could dehydrate them to soften them and make a yummy dip. One of my favorite things to eat before was boiled artichoke with a sauce made out of mayo, lemon juice and garlic powder. I am going to have to try this raw!

how come they have less food in them when they are raw? like you can only get the meat out when you cook them.

I think it is due to the it being very fiberous raw, but the heat beats down the fiber and makes it more meater.

I was thinking about trying raw artichokes too, but I didn't sound like a good idea, because those things are "hard".

i swear i watched people eat raw artichoke and dip it in mayo and just eat the inside of the petals... the thought of mayo like that in the first place made me not try it as a child. :)
