Cranberry Anise Cookies
1 cup hazel nuts, soaked overnight
20 brazil nuts, soaked overnight
½ cup cashews, soaked overnight
15 pitted dates
anise extract
2 TB finely ground dried coconut
Rinse and drain nuts. In food processor combine the nuts, dates, extract and coconut: mix until ground fine. Transfer to bowl.
In blender:
¾ cup cranberries
1 medium blood orange, peeled
2 TB honey
a pinch or so of stevia if too tart
raisins
Blend the cranberries, orange, and honey: combine well.
Mix the blended items into the ground nuts and dates.
Add raisins.
Let chill in refrigerator for a few hours.
Form into balls then flatten and put on mesh dehydrator screens.
Dehydrate until firm.
