I sprouted my first alfalfa sprouts and they tasted sooo fresh but then I thought this would taste great w/ some mayo, and tomato on a piece of bread. Booo! I did not have time to whip up the raw mayonnaise recipe but was wondering has anyone made it and does it last a long time in the fridge. Or does anyone have any other suggestions for sprout sandwiches.

I make an avocado mayo-mustard that's quick and easy. Mash half an avo with a tiny pinch of celtic sea salt and a bit of garlic. Add another pinch of ground mustard seed a little bit at a time until it's strong enough [a little goes a long way!].

The eggplant fakon is also good for fakon-lettuce-sprout sandwiches. I believe the recipe is listed somewhere, do a search under "eggplant bacon." I recommend serving with onion bread [recipe also here]. I prefer to add [1T]caraway and [1T]poppy seeds to the recipe for a rye bread substitute.

I don't know what mayo recipe you are referring to, I've made one with nuts, sunflower seeds, bit of vinegar, garlic and Braggs I like. Lasts about a week in the fridge. The more vinegar you add the longer it lasts, but you have to like the way it tastes, too. :)
