...Festively enough, the price is free, but that's besides the point.

1. What is a good source for organic freeze-dried/dried food (Is freeze-dried raw?)?

2. What are some good fruits to make into fruit leather?

BONUS:

What is a meal that isn't a dessert that a "sad" eater would love made into raw? I ask because I have tried several raw recipes and I just don't like the taste of any of them unless they're a dessert and I'm not a salad person. Helping would be helpful. And yes, I can use "help" twice within four words.

First off, anything frozen is NOT raw. Instead of thinking of raw foods as "raw" think more of them as "live" and with any other living macro-organism, once it gets frozen or heating to a boiling temperature, it's dead.

A Definite staple is spaghetti marinara, if you make a flavourful sauce it tastes like the real thing and is so much easier to eat than salad.

Do you have Alissa Cohen's book? She has some wonderful entree recipes that are both easy and delicious. I love her pad thai recipe, for example. Many of the pâtés are deliciously amazing and you can take them and stuff them into mushroom caps for a decadent open face sandwich. Buckwheat porridge is a nice breakfast treat.

Do you have Alissa Cohen's book? She has some wonderful entree recipes that are both easy and delicious. I love her pad thai recipe, for example. I do not. Unfortunately I am not able to purchase it at this time. I'm not a huge fan of SAD pad thai or paté. Buckwheat porridge?

Additional question: How long does fruit leather last?

There are suppose to be some freeze-dried products that are raw. While frozen isn't as ideal as fresh, some frozen items are still raw. When you do your own freezing it's raw.

Spaghetti al Marinara

Serves 4
Ingredients
Spaghetti:
3 yellow summer squash or zucchini
Marinara Sauce:
6 large tomatoes
5 sun dried tomatoes
2 garlic cloves
2 tablespoons oregano
1 tablespoon freshly ground black pepper
1/4 cup onion, chopped
1/2 cup cold-pressed olive oil
1/4 cup lemon juice
4 dates, pitted
1 teaspoon himalayan sea salt


Directions
For the pasta: There are several ways to make pasta from a squash. One is using an ordinary (potato) peeler. Peel thin slices of the squash, then with a fork or knife, create thin strands of "pasta".
Another one is using a fancy, but simple kitchen tool often used in the raw food kitchen and by chefs: a spiralizer. Cut the zucchini in about four pieces and by putting them in the mandolin, you can create beautiful thin angel hair pasta.
Put the pasta strands in a bowl and sprinkle with a mixture of olive oil and some salt. Set aside.
For the marinara sauce put all ingredients in a high speed blender and blend until creamy. Add purified water if you feel the consistency is too thick

The problem is, I'm not exactly sure what how to "freeze-dry" anything. All I know is, when I freeze stuff and then unfreeze it, the food gets very very wet.

Veronica01: Thank you! I definitely plan to try that when I can get the squash/zucchini from my farmer's market. One question though: fresh oregano or dried? Thanks again!

You can dry fruits in a dehydrator. I get dates from my wfs.

I have read that frozen organic fruit, with no other ingredients, are still raw.

I agree. This is demonstrated when we see plants surviving through the winter.

i just got alissa's book a week ago and the calzones look amazing.
