View Full Version : Yay I made Rawviolis!

I usually spend my lunch hour carousing the net for new yummy dinner recipes and i figure if i tried one new one a week it would keep things interesting. So last night after the gym I stopped off at the grocery store to pick up a couple things i needed like a turnip and cherry tomatoes. I took a picture too, just don't have it here yet.

Wrapper:

4 turnips

Peel the turnips. Slice the turnips into very thin slices, by cutting them in half and then using a spiral slicer, mandolin or other vegetable slicer to make thin round disks. These will be used as the wrapper which would normally be the pasta dough.


Cheese filling:

1 cup pine nuts
1 cup macadamia nuts
1 cup walnuts
6 t braggs
8 t lemon juice
2 cloves garlic
1 cup parsley

Blend the pine nuts, macadamia nuts and walnuts in a food processor until ground. Add the rest of the ingredients and blend well, until creamy.


Tomato Sauce:

2 large tomatoes
1/2 cup sun dried tomatoes
1/4 fresh basil
1 clove garlic
6 dates
dash of olive oil (optional)

Soak the sun dried tomatoes until soft. Blend in food processor, the tomatoes, sun-dried tomatoes, basil, and garlic until well blended . Add the dates and olive oil and blend until smooth. This sauce should be thick.


Directions for assembling the ravioli:
Remove a single turnip slice from the batch. Place a teaspoon full of cheese filling in the turnip slice and fold the turnip over until all the sides meet. Squeeze the edges together. Some of the filling will ooze out, but this is what will hold the edges together. Just put the excess back into the bowl to reuse. If you don't have enough filling in them they will not stick together. Place them in a single layer on a large plate and drizzle the tomato sauce on top, allow to sit for a few hours. The turnip will become soft from the tomato sauce. Use a spatula to scoop the ravioli's up and serve.


Because it was just me, I only made half the recipe for the cheese. And one turnip would probably be enough to wrap them all, i only needed 18 slices and had tons left over. My rawviolis were big and round and it made 9, i used all the sauce to pile high on the rawviolis with no olive oil to save on fat added. I could only eat 4 i was so full, the cheese is pretty sticky when you are making them but i only waited 30 min before eating them. I put the rest in the fridge for dinner tonight. :)

I will when i get home, they don't look all fancy like ravioli, they are round lol. But they were good, there's a lot of calories in them with the nut cheese and the rounds being so big. I think it'd be great for a potluck or with salad if you have one or two. I am excited to see how soft my leftovers are tonight, i ate them pretty firm yesterday. I am just blown away by raw marinara sauce, i really hate tomatoes and will not eat them by themselves, but in a sauce i can't get enough

Sounds lovely, I must make them sometime. You know, I've been doing this for years and have NEVER made rawvioli, it's the one thing I've yet to attempt but possibly one of the simplest gourmet dishes.

I love raw-violis! I don't use a sauce on top, just pop the things in my mouth. I also use jicama as the casing. I LOVE the sweet contrast with the salty filling.

My filling was a little sweet i think, it had a mild nutty sweet taste, the marinara was really strong and flavourful so it tasted awesome. Alas I was out all night so I did not upload the pic, i promise i will get to it.

And it wasn't as hard as i thought, the most cumbersome was rinsing the sticky nut mix from the vitamix, scrub hard!

OK so here's my pics i totally forgot haha.. They look alright, but they were definite heaven biting into. The sauce was so thick and flavourful and the nut cheese so creamy and smooth. A definite favourite. But have to cut down on nuts now.
