1 lb baby spinach

2T tahini
1T agave/honey
1T unfiltered sake
1T Braggs
sesame seeds

if desired, wilt spinach by placing in colander and pouring 1 cup boiling water over it, and rapidly cooling with cold water.

combine remaining ingredients, except sesame seeds and mix until creamy. Pour dressing over spinach and sprinkle liberally with sesame seeds.

*By all means just put the dressing on unwilted spinach. Does anyone have a suggestion for how to wilt the spinach without using any heat? It really makes a difference in the texture.

Looks good! maybe u can try to dehyd. for a few to get it that texture or marinate for a few. hope this helps. peace!
