craving potatoe salad

At the cafeteria where I get my salsad for lunch they have potatoe salad..I've been craving it and even had some today. Does anyone have any recipes/suggestions on recipes I can use to substitute this salad ?:confused:

Allissa's potato salad recipe is good. It's made with jicama.

I agree! Alissa's "Potato" Salad looks just like the original, and might satisfy the urge. Another salad that you could take for lunch and skip the cafeteria line is this one: http://www.rawfoodtalk.com/showthread.php?t=47762 Very satisfying, easy to make, and it would travel well.

If that doesn't work, just think of all the cholesterol, fat, and preservatives in potato salad. :eek: :)
