Raw Carrot - Orange Cake
3c carrot, finely grated
2c pecans, ground in a food processor
1/4c raisins, roughly chopped
1t nutmeg
1 1/2t mixed spice*
Date paste**
1/2t salt
1/2t orange zest
1/2c desiccated coconut
* Mixed spice is a blend of cinnamon, coriander seed, caraway, nutmeg, ginger and cloves.
** Make the date paste by grinding 1c soft dates and 1/2c orange juice in a food processor until smooth.
• Thoroughly mix all ingredients together in a large bowl.
• Shape into individual cakes or press into one large cake, ready to be cut at the end.
• Place on a dehydrator sheet and dehydrate at 115 degrees F for 8 - 12 hours. If you don’t have a dehydrator you can simply place the cake into the fridge to set.
For the frosting:
1 1/2c cashews
1/2c water
2T agave
3T coconut oil
1T vanilla
1/4t salt
• Blend all ingredients in a high speed blender until smooth.
• Place in fridge to achieve a thicker consistency and spread on cake when you’re ready to serve.
• Garnish cake with nutmeg.

I will have to try that. Whenever I'm at PCC Grocers I look longingly at the little tiny cups of raw carrot cake in the cooler (not dehydrated). They are made by a raw restaurant in Seattle. I don't buy one because they cost $6.99 for a single serving! :eek:

I make a salad a lot like this... same ingredients, but add one-half to one pineapple, smallish cubes. It's really, really good, even at SAD potlucks!

If anyone is curious how it tastes w/o dehydrating...Delicious!!! Oh my this is fantastic. Next time I'll grate the carrots by hand, the shred blade made them too long, so I tried mincing them. YuM! My husband keeps asking how I got it to taste like the real thing.

So I decided to make the cake today and it was delicious! I had some non-raw friends over to share it with and they were in heaven. I used orange juice in the frosting instead of water and grated some of the zest on top of the cake. I also used half dried cranberries and half raisins. The recipe looked wonderful on its own, I just have the strong urge to tweak every recipe I make ;)

This recipe sounds delicious.
I have a round/donut shaped dehydrator, so I can't put a pan in it. Is the mix thick enough to form into cake shapes and place on a teflex sheet or will it have to be in silicon moulds? Thanks :)

Oh yes! I actually made little loaves instead of a full cake. Yum! That way I can freeze and take out mini loaves when I want. No-on else seems to like too much of my raw stuff. Too Healthy I suppose. LOL!

Great, thanks! I tried a carrot cake recipe on the weekend and I moulded them with a cookie cutter so I have mini round cakes, so cute :)
