What's the most simple, affordable smoothie recipe?
also, is coconut milk considered raw food?

Without knowing where you are and the cost of your food, I don't think anyone here can tell you that.
Basic recipe ~ fluid, fruit, greens.
Coconut milk fresh from the coconut is definitely raw.

wat about not-fresh coconut milk; canned coconut milk.

if it's canned you can be quite certain that it is not raw.
As for homemade coconut milk, has anyone made it using coconut meat and regular water? I don't really have the energy to pry the meat out of fresh coconuts and the whole foods here sells the meat already chopped up and fresh. Would it taste ok made with water? Also, about how long do you reckon it keeps in the fridge?

i think that the coconut meat itself is kinda bland. to me it needs agave to sweeten it up a tad if mixing w/water only--b/c that wuld dilute the tase even more. probably try mixing it with juice instead of water? like fresh squeezed OJ in a hand-juicer.
i think its kinda expensive going raw--AT FIRST. so much new equip to buy and produce isn't cheap (esp organic!!) i am going to shop 3x a week bv/c the produce goes bad (or is eaten!) by then. but htat's JMO & i live in a small town with limited produce.

What about shredded coconut. Is that raw?

If it says "raw" on the package. With dried fruits one never knows what temp it's been dried at.
