Anybody eat it raw? Juice it? Any ideas?

I soak it in a syrup made from fresh orange juice blended with dates. Then eat it. We have a ton in our garden every year.

Which part? The stems NOT the leaves? Right?

I used to eat the stems (red part) dunked in sugar when I was a kid, so I would imagine honey and dates would be fabulous! Maybe throw some strawberries in there and put a pecan date crust (like Ani Phyo's mango cobbler) and it would make a yummy dessert?

ouch! too sour for me :) If I can't eat it plain then it's not good for me--> that's my philosophy. Enjoy it if you like it though. Good luck :D

Dip it in agave. We use to dip it in sugar at my cousin's.

I can't wait for rhubarb to get growing this spring. I'm going to try making a Rhubarb Cream Pie using raweater's Sugar Cream Pie, with Veeeeeeeeeery thinly sliced rhubarb maybe dehydrated a bit first in a thin coating of agave or juice. Then when mixed I'm hoping that the cream pie mix will permeate the rhubarb and voila! Someone on that thread said she made those pies and put them in the dehydrator and served them warm. That is when I got the idea for the rhubarb pie. Any other fruit could be used. HELLO PEACH PIE! Oh boy...we could SO pig out on all this stuff!

Applesauce!!!

I put an equal amount of apples & rhubarb in the blender with a little cinnamon, & water, then blend! Simple & delicious!
SIMPLY DELICIOUS!
(& even better cold! & you can even add a few berries! YUM!)

I thought rhubarb was bad for us raw. It is one of the things I truly missed after going raw last Spring. I looked it up in Barry Ballister's Fruit and Vegetable Stand. He says the following: "Rhubard without sweeteners is inedible. Raw rhubarb is inedible. The green leaf should be removed as it is toxic; the cilia and leaf milk are both irritating and harmful. Rhubarb offers more minerals and vitamins than any other vegetable. It is also an excellent digestive aid and a gentle, effective laxative."

One cup of raw rhubard has 266mg of calcium! Far more than kale.

I'm willing to try it raw. I'm thinking about soaking the sliced rhubarb in filtered water with lemon juice for 24 hours in the fridge, changing the water after 12 hours. This might take out some of the bitter starchiness. Rinse well, drain and marinade in agave or honey. Make a filling of either the Sugar Cream Pie or strawberries blended with dates, and stir in the rhubarb. Pour in a tart crust (less than 1" deep) and dehydrate. I'm sure that would be edible and satisfy the lust for rhubarb in the Spring. :)

Here is another idea I'd like to try. After the soaking and marinating, blend the rhubarb with strawberries and maybe a sweet apple, and make fruit leather. YUM!

He doesn't say it's bad for us, just "inedible without sweeteners". My cousins ate it raw, I ate it raw.. most of us are still here.

one of my friends (not raw, just wacky) eats raw rhubarb all the time. loves the stuff. Then again, I could say the same about certain people and steak. Going to just have to try it and trust your body in the absence of any other kind of "proof".

Agreed! Almost everyone I know thinks most (or at least a lot) of the food I eat is "inedible". :rolleyes:

I cut it in pieces and add it to a lovely fruitsalad, combining sweet and sour, rhubarb is perfect for it.

I bet juicing some with some apple would be good too.
