What are your favorite dehydrator foods that come out crunchy?

Mine are, so far--

Kale chips
seasoned nuts
macaroons

Ditto on Kale chips and seasoned nuts. Also tortilla chips and Eggplant bacon, sliced paper thin, and dried to a crisp.

Care to share how you make your macaroons?

I am in the process of moving and my books are packed..but I have made them so many times I am at the improvise stage=) Originally from raw food, real world--there are 2 versions and I prefer the almond "blondie" type.
I take equal parts of coconut and ground/pulsed almonds, add a big heaping chunk of coconut oil and enough honey/agave to make it stick together, a bit of vanilla and some salt.

It is good as is and is very rice crispy treat-like. I scoop it with a ice cream scoop and push it tight to make a ball. Then dehydrate--they can go a long time or not... they are very, very good --and crunchy.

My attempt at eggplant bacon was not crunchy. And..s nasty I am hesistant to try it again. I have thought about making some flax chip bacon or coconut bacon..

I'll have to try this-- are they tough and jerkyish or crunchy?

Why do they get crisp stored in the fridge I wonder? Is there anything else that crisps up the fridge?

Thanks for the macaroons. I can do that, sounds good! Maybe you shouldn't try the eggplant again. :( Sometimes the eggplants have that nasty bitter flavor. I've made it a couple times, came out slightly different each time. The maple syrup and ume plum vinegar marinade was the best. Wish I had some special equipment to make consistently thin slices.
