This is a recipe by Bear found on the Raw Food Support Bulletin board.
Please let me know if it's not the done thing to post this recipe or other "found " recipes.
p.s. Bear is a very talented raw food cook who felt the need to remove himself from the above bulletin board after a series of quite nasty attacks against him,and we miss him!!
"Cherry Almond Pancakes
by Bear
are delicious, and fresh from a recipe book I am working on.
I often buy up bags of organic frozen cherries, blueberries, and
raspberries from Trader Joe's. Haven't tried it with fresh cherries yet,
although I do have an Apple Cinnamon version , and a Blueberry version.
2 1/2 cups cherries and their juice, if thawed
1/4 cup blanched almonds
1/2 cup ground flaxseed, or flax meal ( I used Nature's Path Flax plus)
May need an additional 1/4 cup flaxmeal- cherries are not always
predictable as to the juice they hold.
pinch salt
1/2 orange, take out the seeds, or juice of 1/2 orange, + a little grated peel.
4 soaked medjool dates (optional, for extra sweetness)
Note: you do NOT want a thin, thin batter. It needs to be
thick, like a pancake batter is, so it keeps it's loft.
Process up well into a puree. Use 1/2 or even 1/4 cup measure,
to put onto teflex sheets. Carefully spread into a round shape,
keeping a loft of 1/2 inch. Do not flatten out- they will flatten
some during dehydration, yet they should come out with a loft
of about 1/4 inch- like a pancake.
Dehydrate at 90, for 6 hours. Carefully flip, removing teflex, for another
3-4 hours. If you are timing these to come out in the morning warm,
use a bigger size pancake, not a little one. I made 4 inch diameter pancakes.
These were a wonderful pancake texture, and delicious with almond
cream, a little maple syrup, and more cherries."
I've just taken mine out of the dehydrator and they are superb (had one with the butter pecan ice cream from another post-wow),I don't know how you could get nearer to the real thing without a griddle!!
