View Full Version : Indian-inspired rice - yummy!

just thought I'd share:

1 head cauliflower
1 parsnip
handful pinenuts
1/2 inch fresh ginger
squeeze of fresh lemon juice
dash sesame oil

process above ingredients in food processor with S blade until 'riced'

add salt, crushed red pepper flakes, and garam masala to-taste

add handful raisins

stir & enjoy!

it's spicy, sweet, flavorful and very filling (especially when you inadvertantly eat the whole bowl as i just did...)!

Sounds good. I don't think I've ever had parsnips. What do they taste like? (probably like parsips, right? haha)

Yup! That they do :D

Parsnips taste like a mild blend of carrot and turnip together. A little sweet...quite nice actually :)

Where can I find garam masala though? I've looked in the health food store and can't find it. I'm sure an Indian market would have it but we don't have one close by. Any other ideas besides online?

i got garam masala in the spice section of whole foods. i think the regular grocery store sells it too - it is simply a mix of cardamon, cinnamon, cloves, cumin, coriander and black pepper -- if all else fails, you can buy the individual spices and make your own.

parsnips are the consistency of a carrot, maybe a tiny bit softer -- but taste more bland to me. they are sweet and distinct -- i really like the taste, but tricky to describe!

i like the mix of cauliflower, parsnips and pine nuts for rice -- it just seems to work.

Wow - cool! I have a head of cauliflower in the fridge, some lemons and the raisins, but no parsnip though. Maybe cashews could be subbed for the pine nuts too? This sounds really good, and now that I have my food processor, it will be a snap to make!

That sounds delicious, I haven't bought cauliflower or parsnips in a while. I'll be adding those 2 items to my grocery list.:)

You could easily substitute cauliflower for the parsnips. I make a 'spanish rice' out of cauliflower; it's wonderful.

I just made up a smaller batch of this(using half of a head of cauliflower)to try this out - it is SO-O yummy! I didn't have pine nuts or parsnips, so it's all cauliflower, with raw cashews instead of the pine nuts. I added some chopped mint leaves to it. Will pick up some ginger root while I'm out. This is sitting in the fridge now - I believe it will be even better with the flavors melding a few hours while I'm out at the gym(heading there now). I can see all kinds of possibilities with this way of making "rice" with different international flavors. All courtesy of having finally gotten my food processor a month and a half ago - I'm thrilled! This batch would be great in little collard green wraps, along with some shredded carrots, maybe some bean sprouts too. I don't have that last item this time around though.

i used to used grated parsnips to make vegan "egg" salad...it was YUMMY! i suppose i could make it raw by using some kind of raw mayo...hmm.
