Hi! I'm getting some cardoon in my CSA box w/instructions to cook it. I searched the web and saw someone say to just throw it in a salad but I took a bite and it is majorly bitter. MAJOR. But it has an interesting artichokey-aftertaste, so I'd love to be able to do something with it, other than kill it in a saucepan. Any ideas?
