Quiche Aux Champignons (mushroom quiche)
Recipe: Kelly Serbonich

Crust
3 cups raw, germinated walnuts
¼ cup flaxseeds, ground
1 garlic clove, pressed
½ t. dried thyme
½ t. dried tarragon
½ TB Bragg Liquid Aminos
salt and ground black pepper to taste

In food processor, combine all of the crust ingredients. Process until a dough is formed and the walnuts are very well chopped. Very lightly oil a 12-inch pie pan or dish. Press the crust mixture into the plate and dehydrate overnight, or let sit in the sun for 1-4 hours.

Filling
¾ cup chopped scallions, using both green and white parts
3 ½ cups chopped cremini mushrooms
1/3 cup olive oil
2 TB. Bragg Liquid Amions
Juice of 1 ½ lemons
Pinch of ground nutmeg
1 cup raw, germinated walnuts or 1 cup tahini
1 ½ t. psyllium husks powder
1 cup water

Marinate the shopped scallions and mushrooms in olive oil and ½ TB. Bragg Liquid Aminos in a large bowl for at least 1 hour.

In a blender, combine the lemon juice, nutmeg, walnuts or tahini, psyllium powder, water, and the remaining 1 ½ TB of Braggs Liquid Aminos.
Blend well until smooth and creamy.
Fold this mixture into the marinated mushrooms and scallions.
Spread evenly over the crust.
Chill for at least 1 hour and serve.
The quiche will firm up as it sits.

The only adjustments I made: did not use flaxseeds and I substituted raw wheat germ for the psyllium husks. I opted for tahini in place of walnuts in the filling. This really is delicious.

Yes, it is very creamy. I didn't post the recipe because it's not mine & I wasn't sure if that's allowed.

I don't see why you can't post the recipe... a lot of people do. I think (correct me if I'm wrong) as long as you give credit to who created it, then it's okay.

i'd might have to wear a blindfold if i were to eat that...lol. i'm not going to say what it looks like to me...lol.
but the crust looks good!
i haven't laughed this hard since a day ot two ago.... it's taken me a few minutes to type this much.

i like the ingrediants..so this may be the case of looks can be deceiving. i might try it some day.

Yeah, I have a feeling the picture doesn't do it justice. It just looks texturally and color-wise not appetizing but I bet it tastes great!

oh man.. you took the picture off! i still remember what it looks like.,..ahahaha. i have no idea why it makes me laugh so hard. i just laughed hard again thinking about it. but i am a strange one with sence of humor on an occassion.
thanks for the enjoyment although it likely wasn't what you were aiming for.

Awww, I never saw the picture!!!!!

Sounds like one I'd like to try but....... what are scallions? I thought it was the american term for shallots but now I read green and white i think it's spring onions or leeks - anyone care to enlighten me please?

Glad I made you smile :). Yup, that's my uber ultimate goal! I can't go below that as I'm so 'big boned' and muscular that anything below that is skinny on me, sigh. Been below that when I got struck by typhoid as a teen and I was skin and bones! Yet I weighed in at 68kgs (149lbs). Hence the standard BMI calculations never work for me, lol. Those who see me now do not believe I'm as heavy as I am as 'I carry it well' apparently. Well, extra is extra and I'm getting rid of it, lol!

I just made it and it's delicious. I'm going to have to eat it before my mom gets her hands on it, lol. She loves mushrooms to.
