View Full Version : Chocolate Mint Cheesecake/Vitamineral Green

Hello raw chefs & bakers!

So I'd like to try Sweet Gratitude's Chocolate Mint swirl cheesecake sometime soon. They call for 2 teaspoons of Vitamineral Green for the mint green part of the cake. This is for coloring (yet you also use mint leaves). I don't have Vitamineral Green and don't really have a desire to purchase this expensive green stuff (but I will if totally necessary). I'm wondering if I could use some spirulina instead. Maybe not because 2 teaspoons of spirulina would be too strong?? I don't fancy the taste of spirulina in smoothies so I hardly ever use it. I was just wondering if I could find a cheaper and more accessible green powder to use in lieu of the Vitamineral Green stuff

Anyone make the choc mint cheesecake yet? It does look amazing from the photo in the book :D

I would try it minus it, if you are using mint leaves? I'm thinking it's not for the mint, so much as for some extra added nutrients?

If you do buy it do not think of it as money wasted. It is good stuff. You should add it to your smoothies instead and you may like it as it does not taste as strong.
Mat Monarch recently had it on sale for $49 and may still have.

Actually I think the Vitamineral Green is used primarily for the nice bright green color. At least that's what I thought I read (don't have the book here with me at work). I'd really like to get a beautiful green color for photos ;)

I did see some green powders at City Market Co-op in the vitamin section. But I have no idea what any of them taste or look like. Would love to find a generic type green powder that will give a great color but taste neutral for the mint part of the cake :D

Alissa's Green Powder has EXACTLY the same ingredients as Vitamineral Green. If you look at both websites you will see other similarities in the description, and the container. (I could be very wrong, but I think Alissa's powder is Vitamineral Green under a "private label".) Alissa's price is the best anywhere I have found. Get the 10 oz bottle for $35. It tastes much better than spirulina. I add a tablespoon of Vitamineral Green (available locally w/o shipping costs). to my smoothies. A 10 oz bottle kept in the fridge lasts me for a couple months. If you decide to use spirulina put it in a little at a time and taste test as you go.

That cheesecake sounds amazing. Enjoy!

Thank you for the suggestions RawKnitster! I'll check out Alissa's green stuff :) I may just see if Linda (our VT seller of raw stuff) will sell me a small quantity of the VM. Not sure if that's possible. Other suggestions were: using spinach juice or dehydrating spinach and grinding it up in a powder. I won't be able to make it this weekend but hopefully soon as I'm waiting on a raw food order. This weekend it's looking like the Mocha Cheesecake from Sweet Gratitude as my husband has been eyeballing that one! ;)

i have a small inexpensive bottle of blue/green algea in capsule form i open up for coloring mint in a mint chocolate duo... i got it a while back on the cheap at walmart.
also chlorella does the trick quite nicely. i have a bag of that from 123raw.com
be sure to use just enough to get the color you wish and not too much.

Great idea to ask for a sample. One store I go to (Central Market) keeps samples of some items behind the counter. They also sell single serving packs of various green powders for around $1.50. So does Whole Foods.

Mocha Cheesecake! YUMMMMM!!!!

I like Snowdrops suggestion of using the blue/green algea capsules!

Well here's what I did yesterday. I left work early to drive over to Worcester Vt to pick up my order of raw 'unbaking' supplies. Linda gave me a free sample of the Vitamineral Green so I'll try that at my first attempt with the mint choc cheesecake. I'm thinking of making this in a couple weeks for a St Pattys day weekend (I know! I know!, I'm quite shameless..hehe :o)

Well my husband decided he wanted the Cappuccino Pie in Sweet Gratitude as I am also stocked up on Irish moss now! It's similar to the mocha cheesecake but the Irish moss will give it a different consistency and there's also a mocha meringue topping on the Capp pie. I'm currently cold brewing some esspresso! yum! (my concern is the caffeine factor in this dessert. I'm still a coffee drinker :( but I would hate to serve my pie to someone sensitive to caffeine and coffee)
