My flax crackers went mouldy!

I made flax crackers last weekend using Ani Phyo's Cajun Bread recipe.

I kept them in an airtight container but last night I noticed they were starting to grow white, fluffy mould :(

Did I not dehydrate them enough or should they have been kept in the fridge? I have read that flax crackers keep for a while.

When I make any crackers, I leave them out uncovered for a few days to make sure they are completly dry before I put them away. Apparently there was still some moisture in them.
