Hello,
I have a recipe for Raw Chocolate Pudding that I am wanting to try. The recipe calls for 1 tbsp of lecithin powder, but I do not have any. Is there a substitute for lecithin?

I've seen coconut oil, coco butter, psyllium powder, liquid lecithin, and chia seed used for thickening for pudding and pie filling-type recipes. I've used all of the above, except the coco butter. The psyllium works well and the chia really gels, but you will have a tapioca-like texture unless you grind the chia. Hope this helps!

lecithin isn't a thickener, it's an emulsifier. i don't know of any substitutes.
