View Full Version : Entree to knock omnivores socks off

Hi there,

I am taking a dish (or two) to a gathering on Saturday. Any suggestions about an entree which will impress folk not into raw. I want something that will make their eyebrows raise and have them go, "Hmmmm; this ain't bad". My other dish is going to be Chicoro's white chocolate-strawberry cheesecake, yuum yumm. People tend to always bring desserts to gatherings though so I want to also take something healthy, you know.

Any suggestions of a universal fav.

I love to throw together cheeze cakes (chocolate/raspberry layers are a huge hit) for events like this! Cookies? There is a great Apple Cookie recipe in RAWvolution.

A raw pesto pasta is always a fail safe (in my experience). One of my favorites for peoples first foods is raw pizza! On flax crackers with fresh marinara and all sorts of good veggies (and avo cheeze). Not sure how logical that is to bring to an event though? Are you looking more for a meal or an appetizer?

Yum yum yum! Thinking about food is making me hungry! :)

Caponata. This is great stuff. No one will be thinking, "Ewww! Health food!" Make it a day ahead of time. Take out of the fridge an hour before serving. Best served at room temp.

Grrreat! Got the recipe and the ingred's. It'zzzz onnnnn. You all should have seen me last night when everyone was listing what they are going to contribute to the gathering. I was like, "Well, I'm bringing white chocolate-strawberry cheesecake, and an entree, umm, mm, it begins with a "c", umm, a "C" dish". Duh, I could NOT think of the name of this dish. Was funny. Then I was like, "Trust me, yaw'll gonna love it!" :D

This salad is great by itself or with mexican flax crackers


Corn Salad with Cilantro Dressing

Salad:
4 fresh Corn Cobs, stripped
1 diced Red Bell Pepper
1 Avocado, cubed

Dressing:
1 minced Garlic
1 small Onion
½ Jalapeno Pepper
1 small bunch Cilantro
1 Lime, juiced
½ tsp Sea Salt (or to taste)
2 tsp Flax or Olive Oil
½ tsp Cumin Powder

In a medium bowl, combine the corn, red bell pepper & avocado. Set aside. In a blender, Vita-Mix or food processor, combine the dressing ingredients. Pulse until the cilantro is finely chopped. Mix the dressing with the salad. Enjoy!

We're going with the cheesecake and the caponata. I've been amassing the ingredients (still need a few) and will do later today so it can set overnight for consumption tomorrow.

The caponata calls for sundried tomato. Please tell me I can dehydrate tomato and that will suffice? I have it in the Excalibur since last night to be ready for prep today.

I made the caponata - wow!!!!!!!! where has it been all my raw life? It's amazing. I would never have known it wasnt cooked. I had to add some soak water to the sauce to get it to blend. I didn't have raw olives so I added some avocado and zucchini. It was delicious, thankyou.

Really??? I am so glad to read this. I wasn't able to make the meal the other day 'cause guess what . . . I DON'T HAVE A PAN to put it in duh. I went though all that time and expense, got the ingredients home and BLAM, I don't have dishes to put it and the cheesecake in.

This is the most time I have spent in the kitchen ever. Before this raw food journey my kitchen was basically for my desk, puter, printer - you feel me? :D So, now that I've gotten all the Vita-mix's, saladacco's blah, blah, guess I'd better purchase air-tight storage containers and the like.

Meanwhile I have an eggplant on top of my refrigerator looking at me. I've got to find something this week to use it up in this recipe. So good to know it tastes good 'cause to be honest it doesn't look like it does (to me). :eek:, did I say/write that?

If you don't want to make the caponata this week the eggplant might keep another week in the fridge. I've kept them for 2 weeks before. The seeds inside turn a little brown but it still tastes fine.

Do you have a dehydrator? If yes, do a search for "Eggplant Bacon". I did a take off of that to make chips. Sliced it ever so thinly in rounds with the peel on, marinated, then dehydrated until completely crisp. The thinner the better! CRUNCH!

Have you got a regular pie pan? The cheesecake would be fine as pie. Not as pretty as using a springform pan, but just as tasty.

No pie pan and lordy the eggplant has been sitting on top of my fridge since I got it. Will go out today and get pans. Will do the eggplant one today so plant doesn't spoil and the cheesecake one tomorrow for taking to event on Friday.
