View Full Version : Black Potato Chips???

Ok, I tried to make potato chips out of just about everying. Nothing comes close enough for me.
So I just bought a regular' ol potato , sliced it , salted it, and dehydrated it. It turned black. Anyone got any clues as to why? The salt maybe?
Also if anyone has had any sort of chip that is close to the potato chip , I'd appreciate the recipe.

I've tried potato chips several times. I've soaked them in lemon water, drizzled them with olive oil, salted them etc etc. Never fails - some of them turn black.
I have found that they must be sliced very very very thin... and they have a better chance of not getting as dark. Even then, some turn a bit and others turn black. They taste good, just don't look so good!
So, no, don't have an answer for it. Sure hope someone does! I would love to make light colored chips!

I was about to try this... potato chips (with lemon juice.)-
do you need to dilute the fresh lemon juice with water? maybe more lemon is needed to get the desired color- but not too much to ruin the flavor of the potato~?
so what about sweet potatoes or yams? do they turn out better?
do you use lemon juice on those too?
I'm full of questions today~ :confused: :p
by the way- Anthony11's potato chips and RawVeganMom's Sweet and Spicy Chips look great in the picture thread! How did they do it?!

I soak them in a solution of vitamin C crystals (acsorbic acid) in water which helps keep the color. Be careful not to oversalt them.
