My family is from Puerto Rico, and I am having massive longing for sorrullitos. They are basically fried corn-bread sticks with cheese inside. Really simple, but so very delicious. The dough is on the sweet side. I want to make a raw version, and I thought I would see if anyone here has any suggestions. Ideally they are just a little bit crunchy on the outside and soft on the inside. I do have a dehydrator.

Mattshor, I am not an expert. I did stumble across a post here about a woman who uses farmer's corn (sundried corn) to grind and make raw cornmeal... Maybe that could help in that recipe... Maybe raw cornmeal, water, salt, a little honey/agave, shape them and dehydrate them for a while... I have no idea how to make the American cheese... but I am from Puerto Rico and grew up eating sorrullitos without the cheese... they were very good as well... maybe you can also come up with a way to make the mayo-ketchup-garlic sauce we love to eat with the sorrullitos. Good luck! Let me know how it goes if you try making these...:p

1) I love your avatar, I very nearly used the exact same one!
2) I'm giving it a go with the corn chip recipe from Alissa's book. I added some nutritional yeast to give them a cheesier taste. I'm working on a mayoketchup recipe. I'll let you know how it goes.
