This was so good I wanted to share the recipe with you. I reluctantly shared the dish with my husband. He RAVED about it. Finally, another raw dish he will eat! Next time I'll make more. :)

Cashew "Mock Chicken" Salad
This is really delicious stuffed in a large tomato or avocado.
Serves 4-6
I cut some of the ingredients in half, they are listed in red. Also, allowing a couple hours to let the flavors meld made a huge difference in how much I liked this dish.
Ingredients:
1/4 C sunflower seeds (2 Tablespoons)
1 C cashews (1/2 cup)
1 C of pecans (1/2 cup)
1 cucumber, peeled, seeded and cut into chunks
2 green onions, cut into smaller pieces
1/2 sweet apple (1 whole golden delicious apple)
1 celery stick, cut into chunks
1 tsp. dried dill (1/2 tsp.)
1/4 tsp. curry powder (1/8 tsp.)
juice of 1/2 a lemon
Preparation:
Put all ingredients in a food processor and pulse chop until everything is chopped medium to fine. Cover and put in the fridge for a couple hours to allow the flavors to meld. Just before serving add 1 small chopped avocado, stir gently. Serve in a hollowed out sweet pepper, tomato, or the avocado shell.
