CHOCOLATE, CHOCOLATE BROWNIES A slight variation of the recipe from veganbear.blogspot.com:
3/4 cup Macadamis Nuts (soaked about 4 hours)
1/2 cup medjol dates
3 T. agave syrup
3 T. water
3/8 cup (6 T.) cacao powder
1/2 t. alcohol free vanilla extract
Drain nuts, process in food proceessor until finely ground and slightly pasty. Add dates, agave, water, and vanilla. Process until smooth. Add cacao. Process until blended. Using a small ice cream scoop portion onto a teflex sheet. Using a piece of plastic wrap flatten the portions evenly. Dehydrate at 105 degrees for 12 hours. Flip onto mesh screen. Dehydrate to desired doneness.
POPPERS A slight variation of Nut Dreams from I don't remember where, probably from someone here on RFT:
1/4 c. almond butter
1/4 c. maple syrup
1/4 c. chopped walnuts
2 T. cacao powder
1/4 c. buckwheaties (sprouted, dehydrated buckwheat)
Combine first 4 ingredients in a bowl, mix well. Add buckwheaties and mix gently. Roll into balls.
FUDGE PIE A combination of several fabulous recipes including RP Brownies and Alissa's Fudge Cake:
Base
1/2 c. walnuts
1/2 c. medjol dates
1/4 c. cacao powder
1/2 t. alcohol-free vanilla extract
pinch of pink salt
Blend to a smooth paste in food processor. Line 2 mini tart pans with plastic wrap. Press paste into pans.
Topping
Melt in dehydrator
1/4 c. coconut butter
2 T. coconut oil
Add
1/4 cup agave syrup (more or less to taste)
1/4 cup cacao powder (more or less to taste)
1/2 t. vanilla
pinch of pink salt
Stir together by hand. Pour on top of cakes. Put in fridge to set.
Use any extra topping to make chocolate bars.
CRUNCH BARS
Extra topping leftover from Fudge Pie mixed with buckwheaties. Poured into plastic lined loaf pan and set in fridge to harden. Cut with a pizza slicer after hardened.
Never met a cacao recipe I didn't like. (Unless it had avocado in it.)
Would welcome any cacao recipes or suggestions you are willing to share. :)
