I have loads of spinach that I'd like to use before they go bad.
Any suggestions (except juicing)?

I make salads out of it. If you put it in the food prosessor for a few turns it is easier to eat and faster also. Add some tomatoes, mushrooms and I almost always add broccoli. Sorry I couldn't be of more help.

1. Marinate it and add in onions, peppers or whatever you like and seasonings.
2. I also add it to my smoothies for an added boost!
3. http://rawguru.com/html has a recipe for a creamy spinach soup:
Cream of Spinach Soup
serves 2-4 people
Ingredients
2 cups spinach
1 cup cucumber juice
1/2 cup cashews
2 tbs. lemon juice
Sea salt to taste
Dash of nutmeg
How to: Put everything in a high speed blender and blend till thick and smooth. Serve at room temp.

I'm making flax crackers with all kinds of shredded veggies including spinach. Recipe calls for 2 cups of spinach.

You could make energy soup!
I believe Ann Wigmore's book has the actual recipe, but I never measure anything.
Toss into blender:
1 cuke
1/2 avacado
a handful of spinich
1 - apple
a few sprinkle of dulse
Blend until smooth.
It's a refreshing soup that does just what it's name says, gives you energy!

use it in pesto! it is great for the winter time when fresh herbs are expensive. Just use a little basil or cilantro or parsley, and substitute spinach for the rest! Its really good.

We had a bunch of spinach from our garden recently, and my husband dehydrated it for me. I don't know what I'll do with it yet, but there you go! Right now, luckily, I can still get fresh spinach.

Wow great idea about substituting spinach for pesto! I love making pesto but don't always have tons of basil to use so next time I am going to try it out with some spinach!
