The amount you use would be the same for both if using one in a recipe, but the taste can be quite different. I like raw carob and substitute it in many recipe that call for cocao powder.

When you use cacao, you normally need more sweetener because it's bitter. Otherwise the amounts should be similar or you may find you prefer to use less.

I dunno. I exchange raw carob for cacao. Works that way.

Sure they are!
As ray and dimond have mentioned the taste can be pretty different and the raw carob powder is sweeter than cacao powder (a raw carob pod is so very sweet, I love em).
If you use carob regularly as a sub for cacao, you'll learn just how much to sub and what you need to alter a little to suit your tastes.

Thanks to all. I am so excited because I am finally starting to make my own raw foods and snacks. I am excited that after 3 years of raw off and on I am finally on a roll and I want to make some meals and treats for myself so I can really stick to it this time. I made my own caesar salad dressing the other day and I got so excited that my children thought I had lost my mind. I couldn't believe how easy it was!:D The thing is that even when I cook for my kids it's always something simple. I don't like long recipes - I just don't like to put in all of the work. I am a divorced working mom of three with no support system and I am not even going to try. So I am happy that I have been able to find some pretty simple recipes for raw foods and I am going for it! I even took the dehydrator I bought THREEyears ago out of the box at 3:00 this morning and plugged it in to make sure it still works. Shameful! I am pumped!!:D
Anyway thanks again. I guess I sound like a geek huh?? Sorry!:o

Haha, the excitement sounds so familiar!
It seems that nobody can understand the excitement of a simple delicious raw dish or the fun of making it quite like a rawbie. :D
Good on you!

Well the turtles are in progress right now. I put them in the dehydrator at a little after 4:00 p.m. What I really loved about making them is that I got my 13 year old daughter to help make them!:D I can't get my girls to eat any of my raw foods - so I am praying that since she helped to make them she will at least want to try them. I'll keep you posted - it will be some time tomorrow evening as they take 24 hours to dehydrate. I can't wait!:p

Update on the turtles - THEY ARE SOOO DELICIOUS!!! I can't belieive it!! And both of my daughters loved them. They usually make fun of the foods I eat - but they really loved the turtles. They said that they tasted like taffy apples. Whatever -as long as they like em. We'll be making them again soon. Now I feel brave enough to try some other recipes. :D:p
I have a question about the turtle recipe. Has anyone ever made the mxture and just formed it into the little balls and put them in the refrigerater to make solid - instead of dehydrating? After we mixed up all of the ingredients and the mixture was so thick we wondered if we could just put them in the fridge or freezer and get the same effect. Has anyone tried it?

Of course! Raw foods don't actually need to go into the dehydrator, you could make 'fridge cookies'.
The best way to know is to try them.
Tastes good = fine to eat.

Check out the video Cacao Boy which is about David Wolfe and cacao. It's a parody of Cowboy by Kid Rock.

That is exactly what I plan to do. To tell the truth the dehydrated product tasted just like the ingredients I mixed in the bowl. It seems like all the dehydrator did really is to make the mixture a little more firm. Then after I got them out of the dehydrator and let them "cool" for a while I put them in the fridge and then they got even more firm and tasted even better. So next time I will just refridgerate and see what happens. They are so yummy!:D

YEAH! That's GREAT! Thanks so much for updating us. I'll have to look in Alissa's book. I think I've tried this, but I'm not sure.
If I make it with carob, I wonder if my spoiled doggie could try it too! haha. I have some "burgers" in the dehydrator for him right now. Anyways... TMI, right?!

I did Alissa's turtles again last weekend but I did not dehydrate them - I just mixed 'em up and put 'em in the fridge. They were just as tasty as the ones I dehydrated the last time - but without affecting my light bill! I also put a small amount of them in the freezer to see how they would come out. They were frozen solid and tasted really yummy. Only problem was that I had to practically break the plate to get them off - they were totally frozen to the plate. I w/try next time w/waxed paper and maybe they will come off easier. They are so yummy that I think I'm addicted.:p They totally take away my cravings for candy bars...:D

Goingraw, place a sheet of baking paper onto the plate before putting the turtles onto it.
This completely gets rid of the problem of prying the things off of the plate. :)

I was told that carob was the roasted version of cacao . Am I wrong ?

Klomasius I will try that. I actually made more turtles yesterday and before I froze them I put them in the fridge for a few hours to get a little more solid. Then I put plastic wrap on a plate and put a few pieces of the candy on top of the plastic wrap to see how that would work in the freezer. Well the candy solidified even more - which was great...and the candy popped right off of the plastic wrap -which was perfect. BUT the plastic wrap froze to the plate - which I thought was really wierd. I had to practically pry it off! So this morning I wrapped a plate in aluminum foil and put the plastic wrap over the foil and put the candy on top of the plastic wrap and covered the candy w/plastic wrap. I guess sometimes it just takes a little experimentation but now I know what to do. Like right now just talking about them makes me want to go and eat some!:D
