Can i get some ideas of how you all use coconut oil/butter? Especially since we are eating "raw" and not "cooked" foods? I have been reading so many good things about it in general. Thanks!

I use them mostly for making desserts or candy.
A simple version: Measurements are approximate. Melt 1/4 cup coconut oil and 1/4 cup coconut butter in the dehydrator, stir in 1/4 cup agave syrup, 1/4 cup cacao powder, and 1/2 t. alcohol-free vanilla extract. Put a piece of plastic wrap in a pan (or mini muffin tins). Pour the mixture into the pan. Put in the fridge until firm.

The same recipe that RawKnittster posted is also good with a couple drops of peppermint extract in place of the vanilla.
Also I use them for chocolate milk.
water or coconut water
coconut butter
agave
cacao

In addition to adding it to my raw chocolate treats (YUMMMMMMMMMMMM).... I like to just take spoonfuls of coconut butter as a snack right from the jar!!! Also like to spread the oil on raw crackers.....:p

I often put a Tbs. of coconut oil in my green smoothies. I sometimes add some to banana ice cream 'makes it a little like the crunchies in the Nestle's bars. And I regularly smear some on my face at night. 'Great stuff!

I've put a bit of this in green smoothies, and raw ice cream, but for me, this is awesome as my only body product, a curl-enhancer/pre-shampoo treatment, and as a component of my own unrefined shea butter, extra-virgin coconut oil, vegetable glycerin face and body cream. Great stuff, that is literally like food for the body when applied, as well as eaten! I won't use anything else now. Be sure to get the extra-virgin coconut oil - the extra price is totally worth it as there is such a difference between that and the cheapo refined coconut oil out there. Nutiva is a good brand, and at my co-op, they have this in the wet bulk department for only $4.95 a pound, so I can slather away!

As I understand the 'rules' I can tell you about a recipe I made the other day with Coconut oil (and I actually added raw coconut butter to it as well to make it easier to mix)...It was yummie!
Coconut Breakfast Cakes (from Ani Phyo)
2C whole flax seeds, or 3C flax seed meal (I used sprouted, flax seed meal)
2Tbsp liquid coconut oil
1/2C Agave or Maple Syrup (but Maple Syrup isn't raw...)
1/2 tsp sea salt
1/4C water
Mix together and form small 'pancakes'. Top with fresh fruit and drizzel with one of the syrups. My son and I had them with strawberries, raspberries and banana.
